INGREDIENTS
- 1 1/3 cups graham cracker crumbs
- 1/4 cup sifted icing sugar
- 1/4 cup melted butter or margarine
- 2 eggs, unbeaten
- 1/3 cup sugar
- 8-oz. pkg softened cream cheese
- 1/4 tsp salt
- 2 cups fresh or frozen blueberries
- 1/2 cup sugar
- 2 Tbsp cornstarch
- 1/4 tsp salt
- 3/4 cup water
- 1/4 tsp grated orange rind
METHOD
- Mix together crumbs, confectioners sugar and butter.
- Press in 8 × 8 × 2 inch pan.
- Beat eggs.
- Add 1/3 cup sugar, cream cheese and salt; blend together.
- Pour over crumb crust; bake in 375 deg. oven 20 minutes.
- COOL!
- Cover with 1 cup blueberries.
- Blend together 1/2 cup sugar, cornstarch, salt and water.
- Add remaining blueberries and rind.
- Cook over low heat until clear and thick, stirring constantly.
- Pour over berries. Chill before serving.
Makes 8 servings.
