INGREDIENTS
- 1/4 cup canola oil
- 1 cup whole spelt flour
- 1 cup light spelt flour
- 1/2 cup barley flour
- 1 tsp baking soda
- 1 tsp salt
- 3 very ripe bananas
- 1/4 cup brown rice syrup
- 1/2 cup maple syrup
- 1 Tbsp vanilla extract
- 1/2 cup raisins
- 1/2 cup chopped walnuts
METHOD
- Preheat oven to 350F.
- Line a 12-cup muffin tin with unbleached liners.
- Combine dry and wet ingredients separately, then mix together.
- Fill muffin tins and bake for 25 minutes or until done.
