INGREDIENTS
- 1 cup cornmeal
- 1 cup all purpose flour
- 4 tsp baking powder
- 1/2 tsp salt
- 2 Tbsp brown sugar
- 1/2 cup dry milk powder (optional)
- 2 eggs, beaten
- 1 cup liquid milk
- 1/4 cup melted butter or cooking oil
METHOD
- Mix together all the dry ingredients, then add the eggs, milk and oil and stir just ‘til smooth.
- Pour into a greased 8” square pan and bake at 400F until golden brown and tests “done”, about 25 minutes.
