INGREDIENTS
- 3 cups all purpose flour
- 3 Tbsp cocoa
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 3 eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 2 cups grated zucchini
- 3 tsp vanilla
- 1 cup chopped walnuts
METHOD
- Preheat oven to 350 deg. Grease 2 loaf pans.
- In a small bowl, blend flour, cocoa, soda, cinnamon and salt. Sift.
- In a large bowl mix eggs, oil and sugar.
- Stir in zucchini and vanilla. Mix well.
- Gradually add dry ingredients to batter.
- Stir in walnuts.
- Bake at 350 deg. 60 minutes.
