From the Canadian Mennonite Cookbook.
INGREDIENTS
- 3/4 to 1 lb. asparagus
- 1/2 tsp salt
- 1 cup water
- 2 Tbsp butter
- 2 Tbsp flour
- 1 cup milk
- 2 hard cooked eggs, sliced
- 1/2 cup grated cheese
- salt and pepper
- 1/2 cup crumbs
METHOD
- Cut asparagus in 1 inch pieces
- Cook in salted water for about 10 minutes.
- Drain well.
- Melt butter, blend in flour.
- Add milk slowly and cook till thick and smooth, stirring constantly.
- In greased baking dish arrange in layers asparagus, sliced eggs, grated cheese, salt and pepper and sauce.
- Brown crumbs in a little butter and sprinkle over top.
- Bake and serve.
