Gold Cake

From Hot Off the Griddle #12, March 1993.

Make meringues (look for a recipe in our collection) with the leftover egg whites. 

INGREDIENTS

  • 2 1/2 cups cake flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup shortening
  • 1 1/4 cups sugar
  • 7 egg yolks
  • 2/3 cup milk
  • 1 1/2 tsp vanilla

METHOD

  1. Sift together flour, baking powder and salt, 3 times.
  2. Cream together shortening and sugar.
  3. Beat egg yolks until thick and lemon-coloured; add to creamed mixture; beat well.
  4. Add flour mixture alternately with milk; add vanilla extract.
  5. Pour into greased tube pan 9” in diameter.
  6. Bake in moderate oven (350 deg.) 1 – 1 1/4 hours.
  7. Cool 10 minutes.
  8. Remove cake from pan; cool on wire rack.
